Arroz Con Pollo Recipe

After having a great plate of arroz con pollo at my local Mexican restaurant, I decided to see if I could whip up something at home. Having bought a bunch of chicken breast tenders on sale I took a stab at it.

Ingredients:

  • 3 good size chicken breast tenders
  • 1/2 Green Bell Pepper
  • 1/2 Onion halved and sectioned
  • Small amount of jar Garlic
  • Rice (I used Uncle Bens Ready Rice Pack)
  • Badia Fajita Seasoning
  • Mexican Blend Cheese

Directions:

In a pan add a bit of oil and bring to a shimmer. Add the Garlic, Onion, and Pepper. Liberally season the chicken as the vegetables cook (I also added a bit of taco seasoning). Once the vegetables begin to soften add the chicken. Cook the chicken until it is thoroughly cooked, stirring and flipping occasionally. After about 6 or so minutes put the rice pack in the microwave and cook per package instructions. Plate some of the rice, and cover with the vegetable and chicken. Cover with Cheese and let it sit for a few, the steam will melt the cheese. Enjoy!

Some things I’m going to try on the next go round: Use spanish rice instead of white rice for more flavor. Try using a more authentic cheese like queso blanco.
